Enhancing/adapting the ml vacation experience

This summer, we'll once again go to our ml country (Germany), stay a week with my family, and then return for the third year in a row to a family-friendly resort on the Baltic Sea (which isn't as cold as you might think). My daughter loved it there the last two years. We rented a cottage for a week each time, in the mornings she would go to the kids club for 2-3 hours of free play, and the rest of the day we'd do things together as a family. Last year, when she had just turned five, she went to a swim course for an hour every morning before the kids club.
This year, she'll be six, and given the comparisons I can't help making with her bilingual classmates in her school, I'm worried about her progress and trying to find ways to increase her exposure (and need!) of ml. The kids club is fun, but it's free play there, so the exposure is a minimum. The swim course is the only organised activity in the resort for her age group, and she's already passed the "seahorse" exam there last year.
The only concrete thing I've found so far is in a nearby "zoo" for old breeds of farm animals, where they have a day program for kids 6 and up called "zookeeper for a day". Maybe something along those lines, but since it's all day, only one day? (We want to spend some family time too.)
So long story short, I'm looking for ideas of what I could do during this vacation week to increase my daughter's exposure to and need to use the ml. (She has no problems trying new things or interacting with new people. Last year she'd made a friend next door before we'd even brought the suitcases inside.)
What sort of things/activities should I look for in our holiday area? Any suggestions are welcome.
